
Lincolnshire Plum Bread
Great for afternoon tea with butter and a slice of Lincolnshire Poacher Cheese

- Loaf tins
Ingredients
- 12 ozs Self raising flour
- 3 ozs Currents
- 7 ozs Sultanas
- 6 ozs Raisins
- 2 ozs Margarine or Butter
- 2 ozs Lard
- 8 ozs Castor Sugar
- 1 ea Egg
- 1/2 oz Fresh Yeast
- 1 tsp Salt
- 200 ml Milk
- 1/2 tsp Ground Allspice
Instructions
- Preheat oven to 160 fan, 170 F normal oven.Mix dried ingredients (flour, sugar, salt).Rub in fats.Mix in fruit.Warm milk and add yeast and eggs with ½ tsp of sugar.Combine with dry ingredients.Mix well.Place in loaf tin/s halfway up and place in oven on the middle lower shelf.Cook for 1.5 to 2 hours until cooked.Leave in tins until cooled down.Seal in tins or Tupperware in a cool place, as this is best left to mature.Note: Serve with butter and Lincolnshire Poacher Cheese.
